Chef Tracey Couillard, originally from New England, has made her mark in the Indianapolis culinary scene.

After 20 years of service in the Army National Guard, Tracey pursued her passion for cooking, attending culinary school and honing her skills in various Indianapolis kitchens, including Cerulean, Field Brewing, then taking charge of the kitchen at The Wine Market at Fountain Square in 2019.

In 2021, Chef Tracey became the Executive Chef at Ash & Elm Cider Co., where she aimed to create seasonally inspired menus that complemented their ciders.

Now, in 2024 Chef Tracey is carving a new path by starting her own company, 317 Pasta. The goal is simple, provide delicious, belly-filling pasta based meals that are quick and easy to put together by following the directions that she includes.
